Dillon's was a Manhattan restaurant near Broadway owned by Mohammad Islam, who had hired three separate managers -- general manager Martin, operations manager Andrew, and floor manager Khan -- for a business that, as shown in the episode, was losing roughly $20,000 a month. The concept itself was muddled: staff described the menu as Irish-American with an Indian influence, and Ramsay found the dining room nearly empty, with flies present both in the front of house and in the kitchen. His meal arrived with meat hidden in a dish billed as vegetarian, a curry garnished with a rotten tomato, and a beef dish that turned out to be lamb. A kitchen inspection turned up rotten meat and vegetables, green chicken wings, roach activity, and rat droppings and traps in the basement. Ramsay shut the kitchen down mid-inspection and brought in a professional cleaning crew before taking the owner and his managers to see his own restaurant's food-safety standards. For the relaunch, Ramsay eliminated the Western half of the menu entirely, brought in chef Vikas Khanna to lead a fully Indian menu, redecorated the dining room, and renamed the restaurant Purnima. The relaunch had a rocky first service -- dishes went out cold as Martin's attention lapsed -- but improved once floor manager Khan, rather than Martin, took charge of the front of house; Martin quit before Ramsay could recommend he be let go.
