Flamangos was a tropical-themed restaurant that longtime restaurateurs Bill and Adele Csepi opened in 2006 in a nineteenth-century stone building beside the Whitehouse Station, New Jersey train station, working alongside their daughter Cheryl, according to a 2009 New Jersey Monthly feature. After decades running earlier restaurants, the couple had planned to retire, but Adele grew restless within days and the pair decided to open a Florida-inspired dining room instead, blending South African and American dishes under jungle decor, rattan furniture, and an ice cream bar in place of the space's original raw bar. By the time Gordon Ramsay visited in mid-2009, the restaurant was three years old and struggling to draw customers in its rural Hunterdon County setting, and Ramsay questioned the disconnect between the historic building and its tropical theme. Ramsay found the menu overloaded and the kitchen inexperienced, with a chef only weeks into the job, and episode recaps describe dishes including an overly spicy Ahi tuna platter and tough, improperly served filet mignon that he rejected on camera. For the relaunch, Ramsay renamed the restaurant "The Junction," a nod to the town's rail crossing, and replaced the tropical interior with a simpler, blue-and-white country look, removed the wall separating the bar from the dining room, and cut the menu down to a smaller, lower-priced list of comfort food such as roast chicken, ribs, and meatloaf. The Csepi family kept the new name and much of the revised menu but said in the 2009 feature that they disliked aspects of the redecoration and had already swapped out some of the new furniture, and daughter Cheryl said the crew's installation work, including unglued carpeting, needed redoing.
