What happened after Bar Rescue?
Gipsy was a long-running gay nightclub on Paradise Road in Las Vegas, opened in 1993 by owner Paul San Filipo and described on the show as the area's first gay nightclub before newer competitors arrived. By the time of the Bar Rescue visit, the club had lost most of its customer base, was behind on live-entertainment taxes, and was serving drinks in plastic cups with no vermouth on hand for martinis. San Filipo was shown drinking on the job and being confrontational with his own staff, at one point telling the production team his employees deserved the way he treated them; he was sent home in a taxi to sober up before returning the next day. Jon Taffer's team found extensive dirt and moldy produce in the bar and brought in a professional bartender to model service during a stress test before Gipsy's own staff took over.
As part of the rescue, Taffer restructured the entertainment format into three short rotating stage shows so service would not have to pause, brought in a choreographer to train staff in short dance numbers, and introduced new cocktails. The space and name were both changed, becoming SBLV Ultra Lounge -- short for 'South Beach Las Vegas' -- with a 1950s Miami design theme. San Filipo openly disliked the new look and left the location the night of the relaunch.
According to Reality TV Updates, San Filipo returned within days, shut the renamed club down, and moved his staff to another of his bars; he later considered gutting and reopening the space but ran into permitting and contractor problems. The original building was demolished around 2020. San Filipo's Las Vegas Review-Journal obituary, published after his death in April 2022, states that he intended for the Gipsy nightclub to make its return in his honor -- a plan not realized in his lifetime. A new business using the Gipsy name later opened at the same address under different, unrelated ownership, but it is a distinct enterprise from the club rescued on the show, which remains closed under its original ownership.
